Watermelon Arugula Salad

This is another great staple for the summertime; eating produce that is seasonal is perfect for optimizing the nutrient levels! This salad aids in digestion, it has calcium, potassium, folate, B-Vitamins, Vitamin C, and Vitamin K. This is also full of antioxidants and supports your immune health. Also, this is a very refreshing salad for those warmer days! Plus, watermelons are very hydrating. This salad is low in calories too, which can help aid in weight-loss.

Ingredients

1.     1 Whole Watermelon

2.     ½ Cup of Feta Cheese

3.     6 Tablespoons White Balsamic

4.     2 Tablespoons of EVOO or Avocado Oil

5.     ½ A Red Onion, Diced

6.     1 Bunch of Basil (Handful)

7.     4 Cups of Arugula

8.     Optional Protein: ¼ Cup Chickpeas or Animal protein

Preparation Steps

1.     Cut your watermelon into bite-size cubes. Add to a medium bowl.

2.     In a separate medium bowl add your feta, white balsamic, EVOO, onion, and basil, chopped. Mix until combined

3.     Add your feta mix to the watermelon bowl. 

4.     Add your arugula to a large salad bowl and add the watermelon mixture on top. Optional: Add chicken, tofu or other protein source on salad for a full and balanced meal
