Sweet Corn Salad
This simple, fresh, and delicious salad is perfect for the summertime. Utilizing fresh produce allows you to soak up all of the nutrients--Corn is in season during the summer.
Ingredients
1. 4 Medium ears fresh corn, husked.
2. 1 Teaspoon EVOO
3. 1 cup thin strips bell pepper
4. 1 cup diced red onion
5. Salt, pepper, and other seasonings to taste
Preparation Steps
1. Husk corn and remove kernels from the cob
2. Heat oil in a skillet over medium heat. Add the corn.
3. Add the pepper and onion once the corn is starting to brown.
4. Add your seasonings and stir until the bell peppers are slightly soft
5. Serve warm or chilled.
