Gluten-Free Nachos

These nachos are a healthier version that is perfect for those on a gluten free diet. This recipe is low in lactose, high in iron, protein, phytonutrients, and healthy fats. This recipe is filling and perfect for those who are following a healthy lifestyle diet. 

Ingredients

1.     1 Box of organic gluten free corn tortillas, cut into triangles

2.     4 small Ears of Corn

3.     1 cup of spinach

4.     1 cup black beans

5.     1 tomato, chopped

6.     1 avocado, chopped

7.     1 lime, juiced,

8.     ½ cup of goat cheese

9.     2 bundles of green onion

Preparation Steps

1.     Add gluten free tortillas onto a baking sheet. Bake for 5-6 minutes at 400 degrees, or until golden.

2.     Toast corn on a skillet until brown. When cool enough, cut the corn off the ear. 

3.     Once chips are done and cool, add a small base layer on a cast-iron skillet on low heat.

4.     Add spinach on first base layer of chips

5.     Add beans on top of spinach layer

6.     Add another layer of chips

7.     Add ½ of the corn and tomatoes on top the next chip layer

8.     Add more chips and the rest of corn and tomatoes

9.     Top with crumbled goat cheese

10.  Add avocado, lime and onions to a separate small bowl. 

11.  Remove skillet from heat and add avocado mixture to the nachos.

Total Time: 45 Minutes

Calories: 200 Calories per 1 cup

Servings: 9-12
