Corn and Avocado Salad

This refreshing seasonal salad is great during the summer months! Fresh seasonal ingredients are high in nutrients. This salad is a good source of fiber, B Vitamins, Omega-3 fatty acids, and folate. This salad is also savory and filling! 

Ingredients

1.     3-4 Ears of Corn

2.     1 Medium Ancho Pepper

3.     1 Ripe Avocado

4.     1 medium tomato

5.     1/3 Cup Cilantro

6.     2 Limes, Juiced

7.     1 Tablespoon honey

8.     ¼ EVOO

9.     Salt and Pepper to Taste

10.  6 Cups Lettuce

Preparation Steps

1.     Grill your corn until it is brown and smoke your pepper on the stove until it is golden.

2.     Mix in a large bowl, add your corn, pepper, avocado, tomato, and cilantro.

3.     Mix your lime juice, honey, and EVOO into a small bowl. Add salt and pepper to taste,  lightly.

4.     Mix your dressing and lettuce together in large bowl.

5.     Add your corn mixture on top of the lettuce

6.     Top off with more dressing if needed.

Total Time: 30 Minutes
