Asian Inspired Slaw Salad
This is a great salad to keep in your fridge for the whole week! This is an easy recipe that is packed with lots of produce. This recipe has omega-3 fatty acids, detoxifying ingredients, and vitamins and minerals from the produce we use. This salad is savory, low in sugar, and is a great staple for those on a low carb diet.
Ingredients
1. 1 Poblano Pepper and 1 Red Pepper
2. ½ Cup of Peanuts
3. ¼ Cup Peanut butter (with no added sugar)
4. 3 Tablespoon white miso paste
5. 1 Lime, Juiced
6. 1 Teaspoon sesame oil
7. 1 Tablespoon ginger, minced,
8. 1 Cup of water
9. 1 whole package of cabbage (2 Cups)
10. Handful of fresh basil
11. ¼ Cup of cilantro
12. 1 Ripe Peach
Preparation Steps
1. Toast peppers on the grill or stove-top until brown and golden.
2. Toast peanuts in a skillet over medium heat
3. Add peanut butter, white miso paste, lime, sesame oil, ginger and ginger into a medium bowl. Mix until smooth and creamy.
4. Chop the peppers when they are cool enough to touch.
5. Add cabbage, cilantro, basil, and peppers to a large bowl.
6. Mix the dressing with the cabbage mixture
7. Top with a chopped peach. Sprinkle peanuts on top of the salad. Add more dressing if needed.
